Delfino brings a steady, positive presence to the team at our TERRA rooftop restaurant and is well regarded for his commitment and thoughtful communication. He consistently shows initiative and curiosity, embracing opportunities to grow – whether learning a new menu or taking on a different kitchen station. His contributions help uphold the high quality and consistency that our guests seek at Eataly.

What is your background?
“I was born and raised in a small town in Oaxaca, Mexico, named San Pablo Guila. I came to the United States at 18 years old in search of better opportunities. My first job was as a dishwasher at a restaurant, where I worked my way up to become a cook. I was able to learn new Italian dishes and cultures from the four years I worked there. After the restaurant closed, I started at another Italian restaurant, where I worked for 21 years.”

What has your Eataly journey been like?
“I started at Eataly by recommendation from one of my family members. Eataly was offering great pay and benefits that fit my family’s needs, so I became a Line Cook. My role in the restaurant is cooking Eataly’s delicious pastas. My responsibilities are to prepare the best quality dishes promptly. My favorite part of the job is when everybody is working together and sending out dishes at the same time. Over the four years I’ve been working at the restaurant, I’ve learned how to work better with my team. This has allowed me to learn new things not only in cooking but also about the people I work with.”

What advice do you have for a fellow Eatalian?
“Learn to communicate with your team and peers. Working hard is also a way to succeed, but not as much as communicating with one another. I use this saying, ‘Hablando se entiende la gente,’ which means people understand one another by talking. From sports teams to group projects, to the kitchen, and the outside world, nothing is more important than knowing how to talk to other people so they can understand your needs. This will allow you to grow as a person and get your needs met. That is how you can succeed not only at Eataly but in life. Communication and hard work will get you farther in life than you can imagine.”

What are some fun facts about you?
“Besides being an employee at Eataly, I am a father of two. I have a lovely wife whom I have been with since 2001. I enjoy spending quality time with my family and our lovely cat Luffy. I love taking my family out to hike, swim, and explore all the parts of nature California offers. Basketball is my favorite sport to play with my friends and especially my family.”
