Mark grew up in San Jose, California. After graduating from high school, he attended college before he put his studies on hold in 2020 and he began his career in the food service industry. Mark worked as a deli clerk, sushi chef, and meat clerk before joining Eataly in 2022.

Because of his high standards for meat quality, precise preparation of the counter, and thoughtful recommendations on meat preparation, Mark earned the role of Lead Butcher. As a leader, Mark encourages others to share fresh ideas and keeps communication flowing with his team to ensure preparation and collective success.

Curious to expand his knowledge outside of his immediate department, Mark strives to learn as much as he can at Eataly. He is also eager to share his knowledge with others, training leaders on how to meet expectations and excel in their positions. His team members look up to him for his positivity, mentorship, and incredible ability to problem solve.

What is your favorite memory from your time at Eataly so far?
“Definitely when I tried A5 Wagyu for the first time. I’d always heard of it, but never once did I consider buying it, trying it, or even handling it. So, trying it and tasting it for the first time was really something.”

What have you learned since you joined Eataly?
“I’ve learned how to take care of a department. I’ve stepped into a role where I’ve been the one to supply the counter, and that’s definitely something I’ve learned, as well as learning how much we can sell our products for after comparing how much we purchased them for.”

Who inspires you?
“There’s a character in the video game Assassin’s Creed II, and there’s a scene where a character in the game tells the player, ‘Follow your own path. Don’t follow anyone else and don’t have anyone make that path for you.’ I interpret it as, ‘Do what you want, and don’t worry about it.’”

What do you enjoy doing outside of Eataly?
“My biggest hobby is video games – I’ve played them since I was a kid. I also love cooking, historical research, and cosplay. I always tinker around with a samurai suit that I own!”
