Eataly Favorite: Fresh butternut squash ravioli

Rayneice was born in South Jamaica Queens and was raised in Brooklyn. She went to school for Mental Health and Human Services and held various customer-service positions, including for a well-known cheese shop, before arriving at Eataly.

In January 2021, Rayneice joined the team at Eataly Flatiron as a Salumi & Formaggi Artisan. Hungry to grow her knowledge of cheese, she expanded her palate by trying our products and learning their flavor profiles. Diving into her work and asking questions, Rayneice also learned all facets of the department including mozzarella making, dairy shifts, meat and prosciutto slicing, and how to make Eataly-style boards and platters.

Fun-loving and also attentive, Rayneice is adept at building meaningful relationships with team members and guests alike. During the busy holiday season, various Eataly guests shared holiday cards and well wishes with her personally.

Routinely, Rayneice faces new challenges with a smile and exhibits flexibility and patience. To her team members, she is known as a flavor genius. They would also describe Rayneice as funky, in a great way – like some of her favorite cheeses!

In your own words, what does a Salumi & Formaggi Artisan do?
“I cut open wheels of Parmigiano Reggiano DOP and design cheese and charcuterie boards.  I prepare sliced meats, cut cheeses, and provide service at the counter. My favorite part of my job is when a guest tastes and enjoys the different characteristics of a cheese and what makes it unique. When someone loves a cheese, I feel that I have created an experience for them and that I have made a lasting impression. Eataly is not a regular grocery store. With artisanal foods and quality product, we need to pair quality service.”

What is your favorite memory of your time at Eataly so far?
“I would have to say it’s when I was ordering pasta at the Fresh Pasta Counter alongside Katie Holmes, and I didn’t realize it. I was taking my time at the counter, weighing all the great options we have there. Then, when I looked to my right, I realized it was Katie Holmes ordering pasta next to me, waiting behind me in line. I thought to myself ‘I’ve made it!’ ”

When you were a kid, what did you want to be when you grew up?
“I wanted to be a singer! Then, I took a different route. I decided that I just wanted to help people, and that’s what I am doing right now. Helping people and making experiences.”

What have you learned while working at Eataly?
“My Eataly journey has had a lot of lessons, a lot of laughs. It has been great working here. I’ve learned to be very humble and open to learning a lot of new things. Coming to Eataly with 10 years of previous cheese experience, I’ve learned to take constructive criticism and feedback. I’ve also kept learning a lot more about cheeses and meats.”

What advice do you have for a new Eatalian team member?
“Be your most authentic self, and don’t be afraid to try new things. Be open to feedback. Come in with a positive attitude.”

Outside of Eataly, what do you like to do?
“I love cooking. I love theatre and going to see live shows. I also like going to festivals and being around people, especially spending time with my family.”
