Originally from Ecuador, Ivan worked in construction and at a bakery before transitioning to the hospitality industry upon moving to New York City. In 2021, he joined the team at Eataly NYC Downtown and has been a cornerstone of the restaurant team ever since.

A dedicated team player with an unwavering commitment to guest service, Ivan has become an expert in all aspects of his role. Whether assisting guests, training new team members, or supporting private events, he embodies the spirit of collaboration and initiative. Over time, he’s even expanded his skills beyond table support, learning how to be a Barback and a Barista.

Affectionately known as “Captain” by his team, Ivan’s leadership shines through his willingness to help wherever needed. His proactive attitude and adaptability make him an invaluable member of the Eataly family.

What has your journey at Eataly been like?
“When I moved to New York, I applied to Eataly online and came in for an interview. From the beginning, I was welcomed with kindness and felt comfortable here. This is the first place I’ve worked where everyone is so respectful. If I ever have concerns, they are addressed, and that makes a big difference.”

How did you earn the nickname “Captain”?
“When I first started, my team began calling me ‘Captain.’ At first, I didn’t understand why. Then I realized—it’s because I’m always helping others. I don’t stay in one place; I move around and assist wherever I’m needed. Whenever there’s a challenge, they say, ‘Captain, go check it out!’ and I do.”

What does a typical day look like for you?
“When I arrive, I lower the chairs, clean the tables, and sweep the floor. I check that everything is stocked—bottles of water, ice, everything we need. I do this before our team meeting so we’re fully prepared when service starts. Once guests arrive, I ensure they’re comfortable, offer water, and assist servers with anything they need. I enjoy helping Spanish-speaking guests understand the menu. It feels good to make people feel welcome.”

What have you learned during your time at Eataly so far?
“I’ve learned to adapt. I’ve never worked for such a large company before, and it’s been a great experience to try different roles. I’ve supported service across all the Downtown restaurants, done some bartending, and even learned to make coffee. I don’t know everything 100%, but I never let that stop me. I always try my best.”

What advice do you have for a fellow Eatalian?
“Have a positive attitude. If you don’t know something, ask! When new team members start, I’m often assigned to train them. The first thing I tell them is to be open to learning. We are a team, and everyone is here to help. Over time, you’ll feel more confident and comfortable.”

Outside of Eataly, what do you enjoy doing?
“I love soccer—my favorite team is Barcelona!”
